I know, I've been a Sundee Supper Slacker lately. I hope this make up for it. Here are some fave Thanksgiving recipes.

Cinnamon and Spice Pecans

1/3 cup melted butter
2 tsp. ground cinnamon
3/4 tsp. salt
1/2 tsp. cayenne pepper
1 pound pecan halves

Stir all ingredients and bake on a cookie sheet 275 for ??30 mins or so, taste for doneness... (I haven't made these since last Christmas and I can't remember how long to cook them...

Yellow Squash Casserole

4 cups sliced squash
1/2 cup chopped onion
35 crushed Ritz crackers
1 cup shredded cheese (plus a little more -yum!)
2 eggs, beaten
3/4 cup milk
1/4 cup butter, melted
1 tsp salt
ground black pepper

Preheat oven to 400. Cook Squash and onion in a skillet with a little water until tender, about 5 mins, drain.
In a large bowl mix together half the cracker crumbs, half the cheese, the onions and squash, beaten eggs, and milk, butter and salt and pepper.
Spread in a 9x13"dish. Sprinkle with remaining crackers and cheese and dot with butter.
Bake for 25 mins, or until golden brown.

Greek Pasta Salad I (adapted from allrecipes.com)
1/2 cup olive oil
1/2 cup red wine vinegar
1 1/2 tsp. garlic powder
1 1 /2 tsp. dried basil
1 1 /2 tsp. dried oregano
3/4 tsp pepper
3/4 tsp sugar
2 1/2 cups COOKED bowtie pasta (or any pasta)
3 cups fresh sliced mushrooms
15 cherry tomatoes, halved
1 cup sliced bell peppers
3/4 cup crumbled feta cheese
1/2 cup chopped green onions
1 (4oz) can black olives
3/4 cup sliced pepperoni
pepperocini peppers to taste
Broccoli Casserole (from allrecipes.com - Laura Baker)
3 tbsp. butter
1 chopped onion
2 10 oz pkg frozen broccoli
1 10.75 oz can of cream of mushroom soup
1 cup shredded cheese
1 cup mayo
2 eggs, beaten
1/2 tsp garlic salt
salt and pepper
1 1/2 tsp season salt
1 1/2 tsp lemon juice
12 Ritz crackers, crushed fine
2 tbsp butter (for top)
1. Preheat oven to 350.
2. Melt 3 tsp butter in a med skillet over med high heat. Saute onion until golden.
3. In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayo, eggs, garlic salt, pepper, season salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tbsp butter.
4. Bake uncovered 45 mins or until heater through.
